EGGS BENEDICT ON SWEET POTATO TOAST

Method

  1. Remove the sweet potato halves from the bag and place them on a plate. Heat in the microwave at 800w for three minutes.
  2. Meanwhile, sauté the bacon slices on both sides in a frying pan over high heat. Place two slices on each sweet potato half.
  3. Break the eggs into a couple of small bowls of water. Cook in the microwave at full power for 50-60 seconds. Remove the eggs from the water and arrange them on top of the bacon.
  4. Then pour the hollandaise sauce over the eggs and season to taste with salt and pepper. Finish with a pinch of chopped chives.
